Slow-cooked vanilla caramel, plus a sprinkle of fleur de sel, enclosed in a crisp shell of 72% dark or 42% milk Guittard chocolate. 6 assorted designs including boo, damask, witch, skull (not pictured), spiderweb, trick or treat and spooky owl.
I infuse rich cream with coffee beans, real raspberries, roasted hazelnuts or vanilla beans to create caramel bursting with naturally intense flavors. For the chocolates, I mix fine chocolates with cream, cordials, spices and nuts to create playful combinations. Using dark and milk chocolates to mold each confection in a crisp, shiny shell, I decorate each with edible gold and silver or colored cocoa butter.
